Homemade Dulce de Leche Pudding

If you follow me here on the blog, you know I’m absolutely addicted to dulce de leche. Its creaminess and sweetness are so out of this world, and if I could, I would add it to every Brazilian dessert I know.

And it’s not only me–many people in South America are crazy about it too. Actually, dulce de leche is arguably one of the most popular sweets in Brazil, let alone South America. For instance, we often serve with these wedding cookies, pies, mousses, and cakes, to name a few Brazilian foods.

What is dulce de leche?

Dulce de leche is made of milk and sugar cooked for long hours until the milk mixture is caramelized. You can also make dulce de leche from sweetened condensed milk, which makes the process much faster. But, I never make dulce de leche on the stovetop because it takes far too much time. So what I do is simply make dulce de leche in the instant pot. I love it. It works like a charm, and I cook the cans in batches, so I always have this sweet ready in my pantry. It’s very convenient!

Before we go on, I just want to say that dulce de leche and caramel are two different things. Many people confuse them, so it is essential to make this distinction. Caramel is made of sugar and water using the same concept of the dulce de leche—you cook them book until the liquid is caramelized, and only then, cream and butter are added to make the sauce. These two sweets taste a bit similar, but the result is entirely different from each other.

Tips for a delicious dulce de leche pudding

Make the dulce de leche about 1 hour before making your pudding, so it has time to cool off a bit and you can handle the can without burning your hand.

How to make dulce de leche pudding

Here’s step-by-step instructions on how to prepare this delicious dulce de leche dessert. As always, the printable recipe is at the bottom.

  1. Make the dulce de leche and transfer it to a medium saucepan.
  2. In the same pan, add all the remaining ingredients for the dulce de leche pudding and mix well over medium heat. Stir it constantly.
  3. Once the mixture starts to boil, lower the heat and cook for five more minutes. Stir it non-stop now, or the pudding will stick to the pan.
  4. Remove the pan from the heat and allow it to cool at room temperature.
  5. Once the dulce de leche pudding is warm but not hot anymore, pour it into the individual pudding cups.
  6. Cover the glasses with plastic wrap touching the pudding, so it doesn’t create a layer.
  7. Refrigerate for 2 hours.
  8. Garnish with crumbled Marie cookies and serve.
