If you’ve been following me here on the site, you know by now that I’m absolutely crazy about brigadeiro. Because one recipe isn’t enough, I’ve served many brigadeiro variations here on the site, and this passion fruit version is one of them. As a Brazilian fruit, passion fruit is abundant in the country, and because it tastes so refreshing, we use it in a wide variety of recipes, such as teas, smoothies, mousses, and even in caipirinhas – the national cocktail. Put simply, passion fruit is a common ingredient in Brazilian food, at least in Brazilian desserts.
Today’s recipe is a fruity and sweet treat with a slight tartness and a delicious tropical aroma. It’s a one-way imaginary ticket to Brazil. Just close your eyes while smelling it, and you will see. Now, let’s stop dreaming! To the recipe!
Can I make these passion fruit brigadeiros ahead?
Sure! For the best flavor-moisture balance, make it the day before serving it.
How can I keep them?
You can keep it for up to 4-5 days in the fridge or covered at room temperature. They last longer than that, but the truffles become a little dry as the days go by. Alternatively, you can freeze them for up to 3 months, but only if you dredge them with sprinkles instead of sugar. To thaw them, leave the brigadeiros on a plate at room temperature for a couple of hours.
Tips for making a delicious passion fruit brigadeiro
For this recipe, I used passion fruit concentrate. If you have the fruit at home, I explain how to extract the passion fruit juice here. I coated my brigadeiros in granulated sugar, but you can coat yours in anything you prefer. Namely, you can use minced nuts, grated coconut, chocolate sprinkles, etc. To achieve a uniform look, weigh each brigadeiro ball before rolling them. I used about 15 grams for each truffle. For this recipe, you will need candy cups no 3.
How to make passion fruit brigadeiro
Here’s the instruction on how to make this passion fruit brigadeiro. As always, the printable recipe follows at the bottom.
- Grease a plate with butter and set aside.
- In a small saucepan, boil the passion fruit concentrate and sugar over medium heat until reduced to a thick, honey-colored sauce (about 15 min). Stir it continually so it doesn’t burn at the bottom. Scrape the sauce into a small bowl and set it aside.
- In a medium non-stick pan, combine the sweetened condensed milk, table cream, milk, and butter over medium-high heat—always stirring with a spatula. About 15 minutes later, the mixture should be thick, like a cream, but far more liquid than the brigadeiro consistency you would reach in the traditional recipe. The mixture should also peel off the pan easily as you run your spatula through the middle of it.
- Transfer the mixture to a medium bowl and let it cool for 20-25 minutes.
- Add the passion fruit sauce to the bowl, mixing it with a spatula to incorporate. Transfer the brigadeiro back to the non-stick pan and cook it further (2-3 min) until it thickens enough you can run the spatula through the middle without it running back together for 2-3 seconds.
- Remove the mixture of the heat and pour it into the greased plate. Chill in the refrigerator for 1 hour.
- In the meantime, place the candy cups on a serving plate and granulated sugar in a bowl.
- Once the 1 hour is over, slightly wet your hands, put a tablespoon of the chewy mixture on your hands, and roll into a small ball. Cover with the sugar mixture, and transfer to the candy cups.
- Serve with a cup of tea! Enjoy!
